Preparation
- Preheat your oven to 400°F (200°C).
- Chop your potatoes into bite-sized pieces.
- Slice the peppers and onion.
- In a large bowl, combine the diced potatoes, sliced peppers, and onion. Drizzle with olive oil, then sprinkle in the garlic powder, paprika, salt, and pepper. Toss everything together until evenly coated.
- Spread the veggie mixture onto a large baking sheet. Nestle the sausages among the vegetables.
Baking
- Pop the baking sheet into the oven and let it roast for about 30-35 minutes, stirring halfway through.
- Make sure the sausages reach an internal temperature of 160°F before serving.
Serving
- Once everything is beautifully caramelized, garnish with fresh parsley and enjoy!
Notes
You can substitute chicken sausage or even plant-based sausages. Store leftovers in an airtight container in the fridge for up to 3 days.
