  • 1 pound Italian sausages mild or spicy, depending on your preference
  • 4 medium-sized potatoes, diced (about 1-2 inches each)
  • 2 red bell peppers, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Chop your potatoes into bite-sized pieces.
  3. Slice the peppers and onion.
  4. In a large bowl, combine the diced potatoes, sliced peppers, and onion. Drizzle with olive oil, then sprinkle in the garlic powder, paprika, salt, and pepper. Toss everything together until evenly coated.
  5. Spread the veggie mixture onto a large baking sheet. Nestle the sausages among the vegetables.
Baking
  1. Pop the baking sheet into the oven and let it roast for about 30-35 minutes, stirring halfway through.
  2. Make sure the sausages reach an internal temperature of 160°F before serving.
Serving
  1. Once everything is beautifully caramelized, garnish with fresh parsley and enjoy!

Notes

You can substitute chicken sausage or even plant-based sausages. Store leftovers in an airtight container in the fridge for up to 3 days.
