Preparation
- Preheat your oven to 375°F (190°C).
- Place crumbled feta cheese in a mixing bowl and season with salt and black pepper. Optionally, add chopped herbs like oregano or thyme.
Assembling the Rolls
- Lay one sheet of phyllo on a clean surface, brush lightly with olive oil, and layer another sheet on top. Repeat for a total of three sheets.
- Spoon a generous portion of the feta mixture onto the bottom edge of the phyllo, roll tightly like a burrito, tucking in the edges. Repeat with remaining sheets and mixture.
Baking
- Brush the tops of the rolls with leftover olive oil and optionally apply an egg wash.
- Bake for 20-25 minutes until crispy and golden brown.
Serving
- Let the rolls cool for a couple of minutes, then drizzle with chili honey before serving warm.
Notes
Don’t worry if your phyllo pastry tears; just layer it over another sheet. To add more spice, include finely chopped jalapeños in the feta mix. These rolls can be frozen before baking and cooked from frozen.
