Ingredients
  

Feta Roll Ingredients
  • 8 oz feta cheese, crumbled
  • 6 sheets phyllo pastry
  • 1/4 cup olive oil
  • 1/4 cup chili honey store-bought or homemade
  • Salt and black pepper, to taste
  • 1 ea egg (for egg wash, optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place crumbled feta cheese in a mixing bowl and season with salt and black pepper. Optionally, add chopped herbs like oregano or thyme.
Assembling the Rolls
  1. Lay one sheet of phyllo on a clean surface, brush lightly with olive oil, and layer another sheet on top. Repeat for a total of three sheets.
  2. Spoon a generous portion of the feta mixture onto the bottom edge of the phyllo, roll tightly like a burrito, tucking in the edges. Repeat with remaining sheets and mixture.
Baking
  1. Brush the tops of the rolls with leftover olive oil and optionally apply an egg wash.
  2. Bake for 20-25 minutes until crispy and golden brown.
Serving
  1. Let the rolls cool for a couple of minutes, then drizzle with chili honey before serving warm.

Notes

Don’t worry if your phyllo pastry tears; just layer it over another sheet. To add more spice, include finely chopped jalapeños in the feta mix. These rolls can be frozen before baking and cooked from frozen.
