  • 1 lb 1 lb sausage links (Italian or your favorite type)
  • 2 pieces 2 bell peppers, sliced red, yellow, or green – use what you have
  • 1 large 1 large onion, sliced
  • 4 medium 4 medium-sized potatoes, chopped Yukon or red work well
For Seasoning
  • 3 tablespoons 3 tablespoons olive oil
  • to taste Salt and pepper to taste
  • 1 teaspoon 1 teaspoon garlic powder
  • 1 teaspoon 1 teaspoon dried thyme or Italian seasoning for a twist

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss together the sliced bell peppers, onion, and chopped potatoes.
  3. Add the olive oil, salt, pepper, garlic powder, and thyme. Mix until everything is beautifully coated.
  4. Nestle the sausage links into the vegetable medley.
Cooking
  1. Spread everything in an even layer on a large baking sheet.
  2. Roast in the oven for about 30-35 minutes, or until the sausages are browned and cooked through, and the veggies are tender and caramelized. Stir halfway through.
Serving
  1. Plate it up and optionally sprinkle fresh parsley on top for color.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can swap the seasoning or vegetables based on your preferences.
