Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss together the sliced bell peppers, onion, and chopped potatoes.
- Add the olive oil, salt, pepper, garlic powder, and thyme. Mix until everything is beautifully coated.
- Nestle the sausage links into the vegetable medley.
Cooking
- Spread everything in an even layer on a large baking sheet.
- Roast in the oven for about 30-35 minutes, or until the sausages are browned and cooked through, and the veggies are tender and caramelized. Stir halfway through.
Serving
- Plate it up and optionally sprinkle fresh parsley on top for color.
