Ingredients
  

Main Ingredients
  • 2 fillets cod fillets (about 6 ounces each)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, finely chopped Or more, to taste
  • 1 teaspoon balsamic vinegar Optional, for flavor enhancement
  • 1/2 lemon Juice of half a lemon

Method
 

Preparation
  1. Lightly sprinkle salt and pepper over both sides of the cod fillets.
  2. In a large skillet, heat the olive oil over medium-high heat.
Cooking
  1. Carefully place the cod fillets in the skillet and cook for about 3-4 minutes on each side.
  2. Once the cod is cooked, remove it from the skillet and set aside.
  3. In the same pan, add the cherry tomatoes and garlic. Sauté for about 2-3 minutes until the tomatoes start to break down.
  4. Stir in the fresh basil, balsamic vinegar, and lemon juice. Cook for an additional minute.
Serving
  1. Plate the cod and spoon the tomato and basil sauce over the top. Add a sprinkle of extra basil if desired.

Notes

Cod is delicate; avoid high heat to prevent it from becoming rubbery. This dish is also great as leftovers, stored in an airtight container in the fridge for up to two days. Feel free to customize with other veggies like bell peppers or zucchini.
