  • 4 pieces 6-ounce salmon fillets
  • 1 tablespoon olive oil
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup heavy cream Can be substituted with Greek yogurt.
  • ½ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • as needed leaves fresh basil (optional, for garnish)

Method
 

Preparation
  1. Season the salmon fillets with salt and pepper.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin side down, and cook for about 5-6 minutes.
  2. Flip the salmon and cook for an additional 2-4 minutes until the fish flakes easily with a fork.
  3. Remove the salmon from the skillet and cover it to keep warm.
  4. In the same skillet, add the garlic and sauté until fragrant for about 30 seconds, then add the spinach.
  5. Stir in the heavy cream, Parmesan cheese, and lemon juice into the spinach. Cook for about 2-3 minutes until the sauce thickens slightly.
  6. Return the salmon to the skillet, covering it with the sauce. Garnish with fresh basil leaves if desired.

Notes

You can prepare the sauce while the salmon is cooking to save time. Feel free to add cherry tomatoes for extra flavor. Store leftovers in an airtight container in the fridge for up to two days.
