Ingredients
  

Main Ingredients
  • 4 fillets salmon fillets (around 6 oz each, skinless)
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
Optional Garnish
  • to taste Fresh parsley, chopped
  • to taste Lemon wedges

Method
 

Cooking the Salmon
  1. Pat the salmon fillets dry with a paper towel and season them generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until golden brown on one side.
  4. Flip and cook for an additional 4-5 minutes until the salmon is opaque and flakes easily with a fork.
Making the Creamy Florentine Sauce
  1. In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.
  2. Toss in the fresh spinach and cook until wilted.
  3. Stir in the heavy cream and bring to a gentle simmer. Add the Parmesan cheese, stirring until melted and creamy.
  4. Season with a dash of salt and pepper, and add the lemon juice.
  5. Return the salmon to the skillet, spooning the creamy sauce over the top.

Notes

Keep an eye on the salmon to ensure it's cooked perfectly. You can add sautéed mushrooms or artichokes to the sauce for a fun twist.
