Ingredients
  

Wet Ingredients
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 1 garlic clove minced For the garlic butter drizzle
Dry Ingredients
  • 1 teaspoon salt
  • 1 tablespoon fresh sage, finely chopped Dried sage can be substituted if necessary.
  • 1 cup all-purpose flour Sifted for aeration recommended
  • 3 large eggs
  • ½ cup grated Parmesan cheese Additional Parmesan for topping if desired

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a saucepan over medium heat, combine the milk and salt. Warm it gently until it’s hot but not boiling, about 3-4 minutes.
  3. In a mixing bowl, whisk together the flour and sage.
  4. Pour the warm milk mixture into the flour blend, and then add the eggs one at a time. Whisk until the batter is smooth.
  5. Gently fold in the Parmesan cheese.
  6. Grease a popover pan (or muffin tin) with some of the melted butter. Fill each cup about halfway with the batter.
Baking
  1. Pop them into your preheated oven and bake for about 20-25 minutes.
  2. While your popovers are baking, mix the remaining butter and garlic in a small bowl.
  3. When they’ve puffed up and reached a lovely golden brown color, take them out and drizzle with the garlic butter.
  4. Serve them warm.

Notes

Don't overmix! A few lumps in the batter are acceptable and add texture. You can make the batter ahead of time and store it in the fridge.
