Preparation
- Preheat your oven to 425°F (220°C).
- In a saucepan over medium heat, combine the milk and salt. Warm it gently until it’s hot but not boiling, about 3-4 minutes.
- In a mixing bowl, whisk together the flour and sage.
- Pour the warm milk mixture into the flour blend, and then add the eggs one at a time. Whisk until the batter is smooth.
- Gently fold in the Parmesan cheese.
- Grease a popover pan (or muffin tin) with some of the melted butter. Fill each cup about halfway with the batter.
Baking
- Pop them into your preheated oven and bake for about 20-25 minutes.
- While your popovers are baking, mix the remaining butter and garlic in a small bowl.
- When they’ve puffed up and reached a lovely golden brown color, take them out and drizzle with the garlic butter.
- Serve them warm.
Notes
Don't overmix! A few lumps in the batter are acceptable and add texture. You can make the batter ahead of time and store it in the fridge.
