Ingredients
  

For the Popovers
  • 1 cup all-purpose flour
  • 1 cup milk room temperature
  • 3 large eggs room temperature
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon fresh sage, chopped or 1/2 teaspoon dried sage
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
For the Garlic Butter
  • 1/4 cup butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Lightly grease a 12-cup muffin pan or use a non-stick spray.
  3. In a large bowl, whisk together flour, milk, eggs, Parmesan cheese, melted butter, sage, salt, and pepper until you have a smooth batter.
Baking
  1. Pour the batter into the prepared muffin cups, filling them about halfway.
  2. Bake for 20-25 minutes, or until the popovers puff up and turn golden brown.
  3. Do not open the oven door while they are baking.
Make the Garlic Butter
  1. While the popovers are baking, melt the butter for the garlic topping and stir in minced garlic and chopped parsley. Let it sit.
Serving
  1. Once the popovers are out of the oven, drizzle the garlic butter over the tops and serve immediately.

Notes

For best results, use room temperature ingredients. You can customize flavors by swapping sage with other herbs or adding bacon bits or sun-dried tomatoes.
