Ingredients
  

For the Popovers
  • 1 cup all-purpose flour
  • 1 cup milk (whole milk works best!) Use whole milk for best results.
  • 3 large eggs Room temperature is best.
  • ¾ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh sage Or 1 teaspoon dried sage.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon baking powder
For the Garlic Butter
  • ½ cup unsalted butter (melted)
  • 2-3 cloves garlic (minced)
  • Fresh herbs for garnish (optional) Use any fresh herbs you like.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Grease your popover or muffin pan with butter or non-stick spray.
  3. In a mixing bowl, whisk together the flour, milk, eggs, Parmesan cheese, sage, salt, pepper, and baking powder until well combined.
  4. Distribute the batter evenly among the cups of your prepared pan, filling each about halfway.
Cooking
  1. Place the pan in your hot oven and bake for 20-25 minutes, until the popovers are golden brown and puffed.
  2. While the popovers are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté until fragrant and slightly golden (about 2 minutes).
Serving
  1. Remove the popovers from the oven when perfectly puffy and golden. Drizzle with garlic butter and garnish with fresh herbs if using. Serve warm.

Notes

For best results, use room temperature eggs and milk, and do not open the oven door while baking. Popovers are best served fresh but can be reheated.
