  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 packet unflavored gelatin (2 1/4 teaspoons)
  • 1/4 cup cold water
  • 1 teaspoon vanilla extract
  • 1 cup fresh passion fruit pulp (or store-bought if in a pinch)

Preparation
  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5-10 minutes.
  2. In a saucepan, combine the heavy cream, milk, and sugar. Heat over medium until the mixture is just about to simmer.
  3. Once the cream mixture is warm, take it off the heat and stir in the bloomed gelatin until fully dissolved.
  4. Add the vanilla extract and stir to combine.
  5. Divide the mixture into serving cups or molds.
  6. Cover your panna cotta with plastic wrap and let it chill in the fridge for at least 4 hours, or until set.
  7. Shortly before serving, scoop out the pulp of the passion fruits and strain out the seeds if preferred.
  8. Top the panna cotta with the fresh passion fruit pulp before serving.

Notes

Don’t skip the chilling process; patience is key for the best texture. Customize with coconut milk or berry sauce for added flavor. Use clear glasses for presentation.
