Preparation
- In a skillet over medium heat, melt the butter.
- Add the chopped onions and cook until they are golden brown, about 5–7 minutes.
- Push the onions to the side and add ground beef to the skillet. Season with salt and pepper.
- Cook until browned, breaking it up with a spatula as it cooks, about 8–10 minutes.
Assembly
- Lower the heat a bit. Place two slices of bread in the skillet.
- Pile on the beef and onion mixture and cover it with a slice of cheese each, then top with the remaining bread slices.
Grilling
- Once the bottom side is golden brown, flip the sandwiches carefully, pressing down slightly to ensure a good sear.
- Cook until the second side is also golden and the cheese is melted, about 3–4 minutes more.
Serving
- Cut each Patty Melt in half and let the ooey-gooey cheese and juicy beef spill out just a bit.
- Serve these beauties with some pickles on the side.
Notes
Feel free to use ground turkey or even a plant-based burger for a lighter option. Swiss cheese is classic, but cheddar or pepper jack can add a kick. Add some crunchy lettuce or tomato for a fresh touch.
