Ingredients
  

For the Patty Melt
  • 1 pound ground beef or your protein of choice, like turkey or a plant-based alternative
  • 1 medium onion, finely chopped
  • 1 tablespoon butter
  • 4 slices rye bread or your favorite bread
  • 4 slices Swiss cheese or cheddar, if you're feeling adventurous
  • Salt and pepper to taste
Optional Toppings
  • Pickles
  • Mustard
  • Your favorite sauce for that extra oomph

Method
 

Preparation
  1. In a skillet over medium heat, melt the butter.
  2. Add the chopped onions and cook until they are golden brown, about 5–7 minutes.
  3. Push the onions to the side and add ground beef to the skillet. Season with salt and pepper.
  4. Cook until browned, breaking it up with a spatula as it cooks, about 8–10 minutes.
Assembly
  1. Lower the heat a bit. Place two slices of bread in the skillet.
  2. Pile on the beef and onion mixture and cover it with a slice of cheese each, then top with the remaining bread slices.
Grilling
  1. Once the bottom side is golden brown, flip the sandwiches carefully, pressing down slightly to ensure a good sear.
  2. Cook until the second side is also golden and the cheese is melted, about 3–4 minutes more.
Serving
  1. Cut each Patty Melt in half and let the ooey-gooey cheese and juicy beef spill out just a bit.
  2. Serve these beauties with some pickles on the side.

Notes

Feel free to use ground turkey or even a plant-based burger for a lighter option. Swiss cheese is classic, but cheddar or pepper jack can add a kick. Add some crunchy lettuce or tomato for a fresh touch.
