Ingredients
  

For the Meringue
  • 4 large egg whites Freshness counts here!
  • 1 cup granulated sugar Sweetness for a lovely meringue.
  • 1 teaspoon white vinegar For stability.
  • 1 tablespoon cornstarch For a fluffy texture.
For Assembly
  • 2 cups whipped cream For layering.
  • 2 cups fresh strawberries Hulled and sliced.
  • 3 pieces fresh passionfruit Halved and scooped for the juicy pulp.
  • to taste mint leaves For garnish.

Method
 

Prepare the Meringue
  1. Preheat your oven to 225°F (107°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whip the egg whites using an electric mixer until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, while continuing to whip until thick and glossy.
  4. Add the vinegar and cornstarch, gently folding them in until combined.
  5. Spoon the meringue onto the prepared baking sheet, creating a tree-like shape with peaks and valleys.
Bake the Meringue
  1. Place the meringue in the preheated oven and bake for about 90 minutes.
  2. Once baked, turn off the oven and leave the meringue inside until it cools completely.
Assemble Your Pavlova Tree
  1. Once cooled, gently transfer the pavlova to a serving platter.
  2. Spread the whipped cream over the top.
  3. Decorate with sliced strawberries and dollops of passionfruit pulp.
  4. Add a few mint leaves on top for garnish.

Notes

Don't rush the meringue process; humidity can affect the texture of the meringue. Get kids involved for decoration.
