Prepping Your Kitchen (and Ingredients)
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, along with the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Gently fold in the diced peaches, being careful not to overmix.
Baking Time!
- Using a cookie scoop (or a spoon), drop generous balls of cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
- In a small bowl, mix the granulated sugar and ground cinnamon for the topping. Sprinkle a pinch on each cookie before popping them into the oven.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Finishing Touches
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Fresh peaches are ideal but frozen can also be used. Customize with nutmeg or ginger for a unique twist. Store leftovers in an airtight container at room temperature for up to a week or freeze for longer.
