  • 1 sheet puff pastry, thawed Make sure it's thawed before use.
  • 2 medium pears, sliced thinly Ripe pears work best.
  • 1 cup brie cheese, rind removed and sliced
  • 1 medium onion, thinly sliced
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • Salt and pepper, to taste
  • Fresh thyme leaves (optional, for garnish) Adds a touch of elegance.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Add thinly sliced onions and a pinch of salt; stir occasionally. Once onions soften (about 5 minutes), sprinkle in the brown sugar. Stir until golden and caramelized (about 15-20 minutes). Set aside to cool.
  3. Roll out the puff pastry sheet onto a baking tray lined with parchment paper. Score a border about an inch in from the edge.
  4. Spread the caramelized onions evenly across the pastry, avoiding the border. Arrange pear slices on top, followed by brie slices. Sprinkle chopped pecans over everything and season with salt and pepper.
  5. Bake in the oven for 25-30 minutes, or until the pastry is puffed and golden brown.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh thyme leaves (if using). Slice and serve warm.

Notes

Cheese substitutions are encouraged; goat cheese or gorgonzola can provide different flavor profiles. Leftovers can be stored in the fridge and reheated in the oven.
