Ingredients
  

Cookies
  • 1 cup butter, softened Ensure butter is at room temperature for easy mixing.
  • 1 cup brown sugar, packed
  • 1 large egg Room temperature is preferable.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Filling
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup Can substitute with maple syrup or honey.
  • 1/2 cup brown sugar, packed
  • 1 egg egg Room temperature is preferable.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the egg and vanilla extract and mix until combined.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just blended.
  4. In a separate mixing bowl, combine the chopped pecans, corn syrup, brown sugar, egg, and vanilla extract for the filling. Stir until well combined.
Baking
  1. Using a cookie scoop, drop balls of cookie dough onto a baking sheet lined with parchment paper. Make a small well in the center of each ball and fill with a scoop of pecan filling.
  2. Bake for 12-15 minutes, or until the edges are golden brown.
  3. Let the cookies cool for a few minutes on the baking tray before transferring them to a wire rack.

Notes

If the cookie dough is too soft, chill in the fridge for about 30 minutes. Feel free to experiment with different nuts, like walnuts or chocolate chips.
