Cookie Bar Ingredients
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1.5 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract the star of our show!
  • 0.5 teaspoon salt
  • 0.25 cup crushed peppermint candies for a little crunch
Frosting Ingredients
  • 0.5 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and white sugar together until smooth and fluffy.
  4. Add in the egg, vanilla extract, and peppermint extract. Beat until well combined.
  5. Gradually mix in the dry ingredients until fully incorporated, then fold in the crushed peppermint candies.
  6. Spread the dough evenly in the prepared baking pan.
Baking
  1. Bake for 20-25 minutes or until the edges are lightly golden.
  2. Let the bars cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Frosting
  1. While the bars are cooling, beat together the softened butter, powdered sugar, milk, and peppermint extract until light and fluffy.
  2. Spread the frosting over the cooled cookie bars and sprinkle more crushed peppermint candies on top.

Notes

For best results, chill the dough before baking to help bars hold their shape. Drizzling melted chocolate over the frosting adds extra twist.
