  • 2 pieces ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • 4 cloves garlic, minced
  • to taste Salt
  • to taste black pepper
  • 2 tablespoons butter
  • as needed Fresh herbs for garnish (like parsley or thyme) Optional

Method
 

Preparation
  1. Allow the ribeye steaks to sit out for about 30 minutes to bring them to room temperature.
  2. Pat the steaks dry with a paper towel and rub them with olive oil.
  3. Season generously with salt and pepper, then add minced garlic and herbs.
Cooking
  1. Preheat your cast-iron skillet over medium-high heat until hot, or preheat the grill to high.
  2. Sear the steaks on the skillet or grill for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes.
  3. In the last few minutes of cooking, add butter to the pan and baste the steaks with the melted butter.
Finishing Up
  1. Remove the steaks from heat and allow them to rest for about 5 minutes.
  2. Slice the steak against the grain for maximum tenderness and garnish with fresh herbs.

Notes

Pair with roasted veggies or a simple salad for a complete meal. If overcooked, a good sauce can help.
