Preparation
- Lay out your bread slices, shredded cheese, and pesto. If using, slice up some tomatoes or grab a handful of spinach.
- Take two slices of bread and slather a generous amount of pesto on one side.
- Sprinkle a healthy layer of mozzarella on top of the pesto.
- Add thin tomato slices or spinach leaves on top of the cheese if using.
- Place the other piece of bread on top, pesto side down.
Cooking
- In a pan over medium heat, add 1 tablespoon of butter. Once melted, carefully place your sandwich in the pan.
- Grill for about 3-4 minutes on each side, adding more butter if necessary, until the sandwich is golden brown and crisp.
- Once done, remove from the pan and let it rest for a minute before slicing.
- Cut your sandwich in half, serve with extra pesto on the side, and enjoy.
Notes
For best results, toast slowly to allow cheese to melt without burning the bread. Mix cheeses for added flavor. Leftover pesto can be used for pasta or salads.
