  • 2 pieces boneless, skinless chicken breasts
  • 1/2 cup pesto sauce store-bought or homemade
  • 4 ounces fresh mozzarella cheese, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves (for topping)
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt and pepper, then spread pesto sauce on each side.
  3. Place the pesto-covered chicken in a baking dish and top each piece with fresh mozzarella slices.
  4. Scatter halved cherry tomatoes around the chicken and drizzle olive oil over everything.
Cooking
  1. Pop the dish in the oven and bake for 25-30 minutes or until the chicken is cooked through (165°F internal temp).
  2. For a golden cheese topping, broil for the last 2-3 minutes, watching closely.
Finishing
  1. Once out of the oven, top the dish with fresh basil leaves and serve hot.

Notes

Feel free to swap out the pesto for marinara or a light cream sauce. Pair with garlic bread or a fresh salad for a complete meal. Leftovers can be stored in an airtight container in the fridge for up to three days.
