Preparation
- Preheat your oven to 375°F (190°C).
- Season both sides of the chicken breasts with salt and pepper, then spread pesto sauce on each side.
- Place the pesto-covered chicken in a baking dish and top each piece with fresh mozzarella slices.
- Scatter halved cherry tomatoes around the chicken and drizzle olive oil over everything.
Cooking
- Pop the dish in the oven and bake for 25-30 minutes or until the chicken is cooked through (165°F internal temp).
- For a golden cheese topping, broil for the last 2-3 minutes, watching closely.
Finishing
- Once out of the oven, top the dish with fresh basil leaves and serve hot.
Notes
Feel free to swap out the pesto for marinara or a light cream sauce. Pair with garlic bread or a fresh salad for a complete meal. Leftovers can be stored in an airtight container in the fridge for up to three days.
