  • 2 large eggs
  • 1 cup crushed pineapple, drained Make sure to drain thoroughly to avoid sogginess.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
  3. In a large bowl, beat the softened butter until creamy, then add in the eggs one at a time, mixing well after each addition.
  4. Gradually add your dry mixture to the butter mixture, alternating with the drained pineapple and the vanilla extract. Stir until just combined.
Baking
  1. Grease a standard loaf pan and pour your batter in. Shake to level the top.
  2. Bake for approximately 50-60 minutes or until a toothpick inserted in the center comes out clean.
  3. Let it cool for a while in the pan before transferring to a wire rack.

Notes
