Ingredients

Main ingredients
  • 2 cups cooked white rice or any rice you prefer, brown works too
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks fresh or canned, drain if canned
  • 1 each bell pepper, diced any color
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup for a vegan twist
  • 1 tablespoon olive oil
  • 3 each green onions, sliced for garnish
  • to taste salt and pepper
  • optional crushed red pepper flakes for a little kick

Method

Cooking Directions
  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
  2. Toss in the diced bell pepper and cook for an additional 2-3 minutes until softened.
  3. Stir in the pineapple chunks, soy sauce, and honey. Continue cooking for another 3 minutes, allowing the flavors to meld together.
  4. In a large bowl, fluff your cooked rice and add it to the skillet. Toss everything well to incorporate all those amazing flavors. Add crushed red pepper flakes if desired.
  5. Spoon the Pineapple Chicken and Rice onto plates and sprinkle with sliced green onions.

Notes

Keep it fresh with ripe pineapple for the best sweetness. Feel free to customize with your favorite veggies. If your sauce looks lumpy, don't worry - it's just flavor waiting to happen!
