- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
- Toss in the diced bell pepper and cook for an additional 2-3 minutes until softened.
- Stir in the pineapple chunks, soy sauce, and honey. Continue cooking for another 3 minutes, allowing the flavors to meld together.
- In a large bowl, fluff your cooked rice and add it to the skillet. Toss everything well to incorporate all those amazing flavors. Add crushed red pepper flakes if desired.
- Spoon the Pineapple Chicken and Rice onto plates and sprinkle with sliced green onions.
