Ingredients
  

Main Ingredients
  • 2 cups cooked chicken (shredded or diced, rotisserie chicken works wonders)
  • 1 cup fresh pineapple (diced, the sweeter, the better)
  • 1/2 cup red bell pepper (diced)
  • 1/4 cup green onions (sliced)
  • 1/4 cup celery (chopped) because crunch is key
Dressing
  • 1/2 cup mayonnaise Greek yogurt can be used for a healthier twist
  • 1 tablespoon lemon juice adds fresh zing
  • to taste Salt and pepper

Method
 

Preparation
  1. Gather all the ingredients in a large mixing bowl.
  2. In the bowl, combine the cooked chicken, diced pineapple, red bell pepper, green onions, and celery. Gently toss to mix.
  3. In a separate small bowl, mix together the mayonnaise (or yogurt), lemon juice, and a pinch of salt and pepper until creamy.
  4. Pour the dressing over the chicken mixture and toss until everything is coated.
  5. Taste and adjust salt and pepper as needed.
  6. Let the salad chill in the fridge for about 30 minutes for the flavors to meld.
  7. Serve on a bed of greens, in a wrap, or on its own.

Notes

Use leftover chicken or a rotisserie chicken to save time. If you don't have pineapple, try using mango or grapes. For a smooth dressing, stir well if it's lumpy.
