- Gather all the ingredients in a large mixing bowl.
- In the bowl, combine the cooked chicken, diced pineapple, red bell pepper, green onions, and celery. Gently toss to mix.
- In a separate small bowl, mix together the mayonnaise (or yogurt), lemon juice, and a pinch of salt and pepper until creamy.
- Pour the dressing over the chicken mixture and toss until everything is coated.
- Taste and adjust salt and pepper as needed.
- Let the salad chill in the fridge for about 30 minutes for the flavors to meld.
- Serve on a bed of greens, in a wrap, or on its own.
Notes
Use leftover chicken or a rotisserie chicken to save time. If you don't have pineapple, try using mango or grapes. For a smooth dressing, stir well if it's lumpy.
