Ingredients
  

Cream Cheese Layer
  • 8 oz cream cheese, softened Should be at room temperature for easier mixing.
  • 1/2 cup granulated sugar For the cream cheese layer.
  • 1 large egg For the cream cheese layer.
  • 1 tsp vanilla extract Divided: ½ tsp for cream cheese, ½ tsp for batter.
Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar For the batter.
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 large egg For the batter.
  • 1/2 cup milk
  • 4 tbsp unsalted butter, melted and cooled slightly
Pineapple
  • 1 can crushed pineapple with juice (20 oz) Do not drain.
Optional Garnishes
  • powdered sugar or shredded toasted coconut For garnish.
  • vanilla ice cream or whipped cream To serve.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish with butter or nonstick spray.
Cream Cheese Layer
  1. In a medium bowl, beat the softened cream cheese with 1/2 cup sugar until smooth.
  2. Add 1 egg and 1/2 tsp vanilla extract. Mix until combined and spread the cream cheese mixture evenly across the bottom of the prepared baking dish.
Add Pineapple
  1. Pour the entire can of crushed pineapple (including its juice) evenly over the cream cheese layer.
Batter
  1. In another bowl, whisk together 1 cup flour, 1 cup sugar, 1 tsp baking powder, and a pinch of salt.
  2. In a small bowl or measuring cup, beat 1 egg with 1/2 cup milk and the remaining 1/2 tsp vanilla.
  3. Stir the wet ingredients into the dry ingredients just until combined. Fold in the melted butter last.
Assembly
  1. Gently dollop the batter over the pineapple in spoonfuls. Don’t try to spread it perfectly — a few gaps are okay.
Baking
  1. Place the dish in the preheated oven and bake for 35–45 minutes, or until the top is golden.
Rest and Serve
  1. Let the cobbler rest for 10–15 minutes before serving.
  2. Serve warm with a scoop of vanilla ice cream, a dusting of powdered sugar, or a sprinkle of toasted coconut.

Notes

Don’t overmix the batter. Use the pineapple juice for moisture. Soften cream cheese at room temp. Make ahead and reheat before serving.
