Ingredients
  

For the Topping
  • 1/2 cup unsalted butter 1 stick, melted
  • 1 cup packed brown sugar For caramelization
  • 1 can (20 oz) sliced pineapple in juice Drained, save juice for later
  • 10 pieces maraschino cherries For decoration
For the Cake Batter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Melt the butter in a 9-inch round cake pan.
  2. Sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the pineapple slices on top of the brown sugar and place a cherry in the center of each slice.
Mix the Batter
  1. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. In another bowl, mix the eggs, milk, and vanilla extract until smooth.
  3. Gradually combine the dry ingredients with the wet mixture, stirring until you have a silky batter.
Bake the Cake
  1. Gently pour the batter over your pineapple arrangement in the cake pan.
  2. Bake for 45-50 minutes, or until a toothpick comes out clean from the center.
Serve the Cake
  1. Let the cake cool in the pan for 10 minutes before flipping it onto a plate.

Notes
