  • 2 cups cooked chicken, shredded Rotisserie chicken works well.
  • 1 cup long-grain white rice
  • 1 can cream of chicken soup Essential for the casserole.
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables Peas, carrots, corn—choose your favorites.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese Any cheese of choice.

Preparation
  1. Preheat your oven to 350°F (175°C). Spray a casserole dish with non-stick cooking spray.
Mixing
  1. In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, chicken broth, frozen mixed veggies, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Baking
  1. Pour the mixture into the prepared casserole dish. Spread evenly and sprinkle cheese on top. Cover with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, until the cheese is golden and bubbly.

Notes

Use rotisserie chicken for a quick option. Feel free to add leftover veggies or mix different cheeses for more flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
