Preparation
- Preheat your oven to 350°F (175°C). Spray a casserole dish with non-stick cooking spray.
Mixing
- In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, chicken broth, frozen mixed veggies, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Baking
- Pour the mixture into the prepared casserole dish. Spread evenly and sprinkle cheese on top. Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is golden and bubbly.
Notes
Use rotisserie chicken for a quick option. Feel free to add leftover veggies or mix different cheeses for more flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
