Ingredients
  

Cheese and Coating
  • 1 wheel wheel of brie cheese (about 8 ounces)
  • 1 cup shelled and roughly chopped pistachios
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • ½ cup breadcrumbs (Panko works great) for extra crunch
Fig Honey Glaze
  • ¼ cup fig jam or preserves
  • 2 tablespoons honey
Optional Garnish
  • to taste Fresh thyme or rosemary sprigs for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the brie into bite-sized wedges.
  3. Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mix of chopped pistachios and breadcrumbs.
Coating and Baking
  1. Dip each brie wedge first in flour, then in egg, and finally roll it in the pistachio-breadcrumb mix.
  2. Place the coated brie bites on a parchment-lined baking sheet, giving them space to shine.
  3. Bake for about 15-20 minutes or until golden brown and bubbly.
Making the Glaze
  1. In a small saucepan over low heat, mix fig jam and honey until melted and smooth.
Serving
  1. Drizzle the fig honey glaze over the baked brie bites and garnish with fresh herbs.
  2. Serve warm and enjoy!

Notes

You can prepare the brie bites ahead of time and store them in the fridge before baking. Feel free to experiment with different nuts or spices in the breadcrumb coating.
