Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ¾ teaspoon salt
  • ¾ cup warm water (about 110°F)
  • 1 tablespoon olive oil
Filling
  • 1 cup pizza sauce (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup sliced pepperoni or cooked sausage (optional)
  • ½ cup diced bell peppers or onions (optional)
  • 1 teaspoon Italian seasoning (or to taste)
For brushing
  • 1 each egg, beaten (optional for golden crust)
  • a pinch garlic powder (to sprinkle on top)

Method
 

Make the Dough
  1. In a large mixing bowl, combine the flour, instant yeast, and salt.
  2. Pour in the warm water and olive oil. Mix until a dough forms.
  3. Knead on a floured surface for about 5-7 minutes, or until the dough is smooth and elastic.
  4. Cover with a towel and let it rise for about 30 minutes, or until doubled in size.
Prepare the Filling
  1. While the dough is rising, gather your fillings.
  2. Mix the mozzarella cheese, pizza sauce, and any optional ingredients in a bowl.
  3. Add Italian seasoning and mix well.
Roll Out the Dough
  1. Once the dough is ready, preheat your oven to 425°F (220°C).
  2. Divide the dough into 4 equal pieces.
  3. On a floured surface, roll each piece into a circle about 6 inches in diameter.
Stuff the Calzones
  1. Place a few tablespoons of the filling on one half of each dough circle, leaving space around the edges.
  2. Fold the other half over the filling to create a half-moon shape, and pinch the edges to seal.
  3. For an extra touch, you can crimp the edges with a fork.
Prepare for Baking
  1. Place the calzones on a baking sheet lined with parchment paper.
  2. Brush the tops with beaten egg and sprinkle with garlic powder.
Bake
  1. Bake in the oven for about 15-20 minutes or until they’re golden and the cheese is bubbling.
Serve
  1. Let them cool for a few minutes and serve with extra pizza sauce for dipping.

Notes

Use leftovers to repurpose ingredients. Avoid overfilling to ensure calzones close properly. If dough doesn't rise, let it sit longer or use store-bought pizza dough.
