Ingredients
  

Egg Mixture
  • 4 large large eggs
  • ¼ cup whole milk or your favorite milk alternative
  • ½ cup shredded mozzarella cheese
Toppings
  • ½ cup sliced pepperoni or any toppings you like
  • ¼ cup diced green bell pepper for a veggie boost
  • ¼ cup diced onion
  • Salt and pepper to taste
  • Fresh basil or oregano for garnish

Method
 

Preparation
  1. In a medium bowl, whisk together the eggs and milk until fluffy. Add a pinch of salt and pepper to taste.
Cooking
  1. In a nonstick skillet, heat a little oil over medium heat. Add diced onion and bell pepper, sautéing until soft—about 3 minutes.
  2. Lower the heat and pour the egg mixture into the skillet. Cook undisturbed for about 3-4 minutes until the edges start to set.
  3. Sprinkle mozzarella cheese and preferred toppings over the eggs. Stir gently and cook for another 2-3 minutes until fully cooked and cheese is melty.
Serving
  1. Top with fresh basil or oregano and serve warm.

Notes

Customize with leftover veggies, and serve with toast or bagels for a complete breakfast. Leftovers can be enjoyed for lunch or dinner—just reheat in the microwave.
