Preparation
- In a medium bowl, whisk together the eggs and milk until fluffy. Add a pinch of salt and pepper to taste.
Cooking
- In a nonstick skillet, heat a little oil over medium heat. Add diced onion and bell pepper, sautéing until soft—about 3 minutes.
- Lower the heat and pour the egg mixture into the skillet. Cook undisturbed for about 3-4 minutes until the edges start to set.
- Sprinkle mozzarella cheese and preferred toppings over the eggs. Stir gently and cook for another 2-3 minutes until fully cooked and cheese is melty.
Serving
- Top with fresh basil or oregano and serve warm.
Notes
Customize with leftover veggies, and serve with toast or bagels for a complete breakfast. Leftovers can be enjoyed for lunch or dinner—just reheat in the microwave.
