Assembly
- Layer a slice of brie on each piece of toasted bread.
- Top each with a generous sprinkle of pomegranate seeds, a drizzle of honey, and a few fresh thyme leaves.
Final Touches
- Pop the assembled crostini back into the oven for another 5 minutes to warm the brie.
Serving
- Remove from the oven and serve immediately.
Notes
For added crunch and flavor, mix in crushed walnuts or pecans with the pomegranate. You can substitute thyme with rosemary or mint. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
