Ingredients
  

For the Crostini
  • 1 piece French baguette, sliced into ½-inch thick pieces
  • 8 oz brie cheese, cut into thin slices
  • 1 cup pomegranate seeds
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • to taste Olive oil, for drizzling
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet.
  2. Drizzle the slices with olive oil, and sprinkle a pinch of salt.
  3. Bake for about 10 minutes or until the bread is golden and toasty.
Assembly
  1. Layer a slice of brie on each piece of toasted bread.
  2. Top each with a generous sprinkle of pomegranate seeds, a drizzle of honey, and a few fresh thyme leaves.
Final Touches
  1. Pop the assembled crostini back into the oven for another 5 minutes to warm the brie.
Serving
  1. Remove from the oven and serve immediately.

Notes

For added crunch and flavor, mix in crushed walnuts or pecans with the pomegranate. You can substitute thyme with rosemary or mint. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
