  • 4 large portobello mushroom caps
  • 1 cup marinara sauce Store-bought marinara is acceptable.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced red onion
  • 1/4 cup sliced olives
  • 1 teaspoon Italian seasoning
  • to taste olive oil For brushing
  • to taste salt
  • to taste pepper
  • optional fresh basil for garnish Recommended for a fancy touch.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Clean your portobello caps with a damp cloth and remove the stems. Brush each cap with a little olive oil, then sprinkle with salt and pepper.
Baking
  1. Place the caps, gill side up, on a baking sheet lined with parchment paper. Bake for about 10 minutes to soften them up.
  2. Spoon marinara sauce over each baked cap and add your toppings: bell peppers, onions, olives, and a generous portion of mozzarella.
  3. Bake for an additional 10-15 minutes, or until the cheese is bubbling and golden.
Finishing Touches
  1. Sprinkle fresh basil on top before serving. Admire your creation!

Notes

Wipe mushrooms with a damp towel, don’t soak. Feel free to add cooked sausage or pepperoni for added flavor. A lumpy sauce is part of the magic!
