Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground ginger
  • 1 tsp salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tsp vanilla extract
Decoration Ingredients
  • 1 cup powdered sugar for decoration
  • Black icing or chocolate chips for eyes

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, beat the softened butter and brown sugar until light and fluffy.
  4. Stir in the pumpkin puree, egg, and vanilla extract until well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Use a cookie scoop or spoon to drop blobs of dough onto a lined baking sheet.
Baking
  1. Bake for about 12-15 minutes, or until the edges are lightly golden.
  2. Once out of the oven, let them cool on a wire rack.
Decoration
  1. Mix powdered sugar with a little water to create a glaze, then drizzle it over the cookies.
  2. Use black icing or chocolate chips to make the ghostly eyes.

Notes

Don't be shy with your spices! If the dough feels sticky, chill it in the fridge for about 30 minutes to make it easier to handle. These cookies also make great gifts!
