  • 1 lb large shrimp, peeled and deveined
  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 each bell pepper (any color), chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • to taste Salt and pepper

Method
 

Cooking Steps
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes until they’re tender and fragrant.
  2. Sprinkle in the cumin, smoked paprika, and chili powder. Stir and allow those spices to toast for about a minute.
  3. Pour in the chicken or vegetable broth and add the diced tomatoes. Bring the soup to a gentle boil, then reduce the heat to simmer for about 10 minutes.
  4. Add the shrimp to the simmering soup. Cook for an additional 3-5 minutes or until they’re pink and opaque.
  5. Taste and add salt and pepper as needed. Ladle the soup into bowls and sprinkle with fresh cilantro. Serve with lime wedges.

Notes

Prep your ingredients ahead of time for a quicker cooking process. Shrimp can be substituted with chicken or white beans. Adjust spices according to your heat preference.
