  • 2 pieces boneless, skinless chicken breasts Cut in half horizontally
  • Salt and pepper To taste
  • ½ cup all-purpose flour For dredging
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter Divided
  • 1 cup chicken broth
  • ½ cup fresh lemon juice About 2 lemons
  • 2 tablespoons capers Drained
  • 1 tablespoon fresh parsley Chopped, for garnish

Method
 

Preparation
  1. Cut the chicken breasts in half horizontally and season them generously with salt and pepper.
  2. On a plate, mix the flour with a pinch of salt and pepper. Coat each piece of chicken in the flour, shaking off the excess.
Cooking
  1. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown.
  2. Remove the cooked chicken from the pan, keeping it warm on a plate.
  3. Reduce the heat to medium and whisk in the chicken broth, lemon juice, and capers while scraping the browned bits from the pan. Let it simmer for about 5 minutes.
  4. Stir in the remaining butter to give the sauce a glossy finish, then return the chicken to the pan to soak in the sauce for 2 more minutes.
Serving
  1. Plate the chicken piccata, spoon some sauce over the top, and sprinkle with parsley.

Notes

Don’t skip the butter for richness. Add cherry tomatoes or spinach for extra flavor. Capers provide a signature briny taste but can be omitted if desired.
