  • 1 round round of brie cheese (about 8 ounces)
  • 1 sheet sheet of puff pastry, thawed
  • 1 cup fresh raspberries
  • 1/2 cup chopped walnuts (or pecans) Feel free to substitute with pecans.
  • 1/4 cup honey For drizzling.
  • 1 egg beaten egg For the golden glaze.
  • 1 sprinkle fresh rosemary Optional but adds aroma.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out the puff pastry to smooth any creases. Place your round of brie in the center.
  3. Top the brie with the raspberries and chopped walnuts. Drizzle honey over the top and add a sprinkle of fresh rosemary if desired.
  4. Carefully fold the pastry over the brie, tucking it in on all sides.
  5. Place the wrapped brie on a lined baking sheet. Brush the top with beaten egg.
Baking
  1. Bake for 20-25 minutes, or until the pastry is puffed and golden.
Serving
  1. Let the Baked Brie cool for a few minutes before serving it warm with crackers or sliced baguette.

Notes

You can substitute raspberries with your favorite berry. Store leftovers in an airtight container in the fridge and reheat in the oven. For a tangy twist, add balsamic reduction before serving.
