  • 1 cup fresh raspberries Plus a few for the chef’s taste test
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 cup strong brewed coffee (cooled)
  • 1 teaspoon vanilla extract
  • 2 cups ladyfingers
  • Cocoa powder for dusting

Method
 

Preparation
  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract.
  3. Pour your cooled coffee into a shallow bowl for dipping the ladyfingers.
  4. Quickly dip each ladyfinger into the coffee and lay them in a rectangular dish.
  5. Spread half of the mascarpone mixture on top of the ladyfingers, followed by a layer of fresh raspberries.
  6. Repeat the process with a second layer of ladyfingers and mascarpone.
  7. Cover the dish with plastic wrap and refrigerate for at least four hours, preferably overnight.
Serving
  1. Dust the top with cocoa powder and garnish with extra raspberries before serving.

Notes

You can add a splash of liqueur to the coffee mixture for an adult twist. This dessert can be made a day in advance for meal prepping. Other berries like strawberries or blueberries can be substituted if desired.
