  • 1 cup dried cranberries The sweeter, the better!
  • 1/2 cup chopped walnuts Optional, but adds nice crunch.
  • 1/4 cup fresh parsley, chopped For added freshness and color.
  • 1 tablespoon olive oil Enhances the flavor.
  • 1 Juice of 1 lemon For a zesty kick.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Start by grating your carrots.
  2. Core and dice your apple into bite-sized pieces.
  3. In a large mixing bowl, combine the shredded carrots, diced apple, dried cranberries, and walnuts. Sprinkle in the chopped parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, and a dash of salt and pepper. Pour this dressing over the salad mixture.
  5. Toss everything gently until the salad is well coated.
  6. Let your salad sit in the fridge for about 20 minutes to meld the flavors.

Notes

Feel free to mix in fresh spinach or kale, and add honey or yogurt for sweetness. Substitute walnuts with almonds, if preferred. Can be prepared in advance for convenience.
