  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts optional, but highly recommended
Dressing Ingredients
  • 1/4 cup plain yogurt Greek yogurt adds a nice tang
  • 2 tablespoons honey or maple syrup for sweetness
  • 1 tablespoon lemon juice
  • to taste Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded carrots, chopped apple, and dried cranberries.
  2. In a small bowl, whisk together the yogurt, honey (or maple syrup), lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the salad mix, tossing until coated.
  4. Let the salad chill in the fridge for about 30 minutes to allow flavors to meld.
  5. Toss in the walnuts just before serving.

Notes

This salad can be made ahead for meal prep. Store dressing separately until ready to enjoy. For variations, consider adding feta cheese, blueberries, or a splash of orange juice.
