Ingredients
  

For the crust
  • 1 ¾ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ¾ cup unsalted butter, softened
  • ¼ teaspoon salt
For the lemon filling
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • cup freshly squeezed lemon juice The fresher, the better!
  • Zest of 2 lemons
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Make the crust: In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly and press into the bottom of a greased 9×13-inch baking dish.
  3. Bake the crust for about 15 minutes or until lightly golden. Allow it to cool.
  4. Prepare the filling: In a bowl, whisk eggs, sugar, lemon juice, and lemon zest until smooth.
  5. Sift in the flour and baking powder, gently fold into the mixture.
  6. Pour the filling over the cooled crust and bake for 20-25 minutes, until edges are set and the center jiggles slightly.
  7. Let it cool completely before slicing. Dust with powdered sugar before serving.
  8. Slice, serve, and enjoy!

Notes

Use fresh lemons for best flavor. These can be made ahead and stored in the fridge for up to a week.
