Ingredients
  

For the Cupcakes
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 1 lemon, lime, and orange
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Juice of 1 lemon, lime, and orange
For the Citrus Frosting
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • Zest of 1 lemon and lime
  • 1 tbsp milk (more if needed)
  • 1/2 tsp vanilla extract
  • 1 tbsp fresh citrus juice (any of the fruits above)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt. Set this aside.
  3. In a separate bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Add the citrus zest and juices, followed by the milk and vanilla extract. Blend until combined.
  5. Gradually fold in the dry ingredients until just combined.
  6. Line a muffin tin with cupcake liners and fill each about 2/3 full with the batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. Let them rest in the pan for a couple of minutes before transferring them to a wire rack to cool completely.
Frosting
  1. Beat the softened butter, zest, and powdered sugar. Slowly add in the milk and lemon juice until you reach your desired consistency.
  2. Frost the cupcakes generously once they are completely cool.
  3. Sprinkle a bit of extra zest on top for that gourmet touch.

Notes

For a tropical twist, try adding a splash of coconut milk. A pinch of salt in your frosting can elevate the flavors beautifully.
