For the Beef Tenderloin
  • 2 lb beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
For the Seafood Topping
  • 1 cup shrimp, peeled and deveined
  • 1 cup crab meat (or a can of high-quality crab meat)
  • 1/2 cup scallops, diced
  • 4 tablespoons butter
  • 1/4 cup white wine (feel free to sip a bit while you cook)
  • 1 tablespoon juice of 1 lemon
  • Fresh parsley for garnish

Preparation
  1. Preheat your oven to 425°F (220°C). Pat the beef tenderloin dry with paper towels and season with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Sear the beef on all sides, about 2-3 minutes per side until it’s golden brown.
Cooking the Beef
  1. Transfer the beef to a roasting pan and sprinkle with minced garlic and rosemary.
  2. Roast in the oven for 20-25 minutes for medium-rare, or adjust time depending on your desired doneness. Use a meat thermometer to check for 130°F (54°C) for medium-rare.
Seafood Preparation
  1. In the same skillet, melt 4 tablespoons of butter over medium heat. Add the shrimp and scallops, cooking for about 2-3 minutes.
  2. Stir in the crab meat, white wine, and lemon juice. Cook until everything is heated through, about another 3-4 minutes.
Bringing It All Together
  1. Once cooked, take the beef out of the oven and let it rest for 10 minutes.
  2. After resting, slice the tenderloin into beautiful medallions and generously spoon the seafood topping over each piece.
Serving
  1. Plate your creation flamboyantly, garnishing with chopped fresh parsley. Add garlic bread or roasted veggies to round out your meal.
