- Preheat your oven to 425°F (220°C). Pat the beef tenderloin dry with paper towels and season with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Sear the beef on all sides, about 2-3 minutes per side until it’s golden brown.
Cooking the Beef
- Transfer the beef to a roasting pan and sprinkle with minced garlic and rosemary.
- Roast in the oven for 20-25 minutes for medium-rare, or adjust time depending on your desired doneness. Use a meat thermometer to check for 130°F (54°C) for medium-rare.
Seafood Preparation
- In the same skillet, melt 4 tablespoons of butter over medium heat. Add the shrimp and scallops, cooking for about 2-3 minutes.
- Stir in the crab meat, white wine, and lemon juice. Cook until everything is heated through, about another 3-4 minutes.
Bringing It All Together
- Once cooked, take the beef out of the oven and let it rest for 10 minutes.
- After resting, slice the tenderloin into beautiful medallions and generously spoon the seafood topping over each piece.
Serving
- Plate your creation flamboyantly, garnishing with chopped fresh parsley. Add garlic bread or roasted veggies to round out your meal.
