  • 1 piece bone-in ribeye roast (about 4-5 lbs)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
For the Glaze
  • 1 cup fresh cranberries (or frozen, thawed)
  • 1/2 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon Dijon mustard

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Season the roast: Generously sprinkle salt and pepper all over your ribeye, then drizzle olive oil over it.
  3. Sear the roast: In a large, oven-safe skillet, heat a bit of olive oil over medium-high heat and sear the roast for 4-5 minutes on each side until browned.
  4. Prepare the glaze: Combine cranberries, balsamic vinegar, brown sugar, rosemary, and Dijon mustard in a small saucepan over medium heat; let bubble and thicken for about 10 minutes.
  5. Roast it: Pour half of the glaze over the ribeye, then transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare.
  6. Rest and slice: Allow the roast to rest for 10-15 minutes, then slice against the grain and drizzle the remaining glaze on top.
