Preparation
- Let the ribeye steaks sit at room temperature for 30 minutes before cooking.
- Generously sprinkle salt and pepper on both sides of the steaks.
Cooking
- Heat a cast-iron skillet or grill over medium-high heat.
- Add olive oil to the hot pan and let it shimmer.
- Carefully place the steaks in the pan and sear for 4-5 minutes without fussing.
- Flip the steaks and add smashed garlic and fresh herbs, cooking for another 4-5 minutes.
- Check internal temperature for desired doneness, aiming for 130°F for medium-rare.
- Let the cooked steaks rest for at least 5 minutes on a cutting board.
Notes
For non-meat eaters, serve alongside a colorful salad or roasted veggies. Wrap any leftovers tightly and refrigerate for 3-4 days.
