Preparation
- Preheat your oven to 400°F (204°C).
- In a large bowl, toss the cubed beets and sweet potatoes with 2 tablespoons of olive oil, salt, and pepper.
Cooking
- Spread the veggies on a baking sheet in an even layer and roast for about 25-30 minutes, or until tender and slightly caramelized.
- Once roasted, sprinkle crumbled feta and chopped cilantro over the veggies and toss to combine.
Serving
- Drizzle with a little more olive oil and balsamic vinegar if desired. Serve warm.
Notes
Use parchment paper on your baking sheet for easy clean-up. Feel free to swap the veggies with carrots, parsnips, or Brussels sprouts.
