Vegetables
  • 2 medium beets, peeled and cubed Wear gloves when handling to avoid staining hands.
  • 2 medium sweet potatoes, peeled and cubed
Seasoning
  • 3 tablespoons olive oil Plus more for drizzling before serving.

Toppings
  • 1 cup crumbled feta cheese Can substitute goat cheese or mozzarella.
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon balsamic vinegar (optional) For added flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C).
  2. In a large bowl, toss the cubed beets and sweet potatoes with 2 tablespoons of olive oil, salt, and pepper.
Cooking
  1. Spread the veggies on a baking sheet in an even layer and roast for about 25-30 minutes, or until tender and slightly caramelized.
  2. Once roasted, sprinkle crumbled feta and chopped cilantro over the veggies and toss to combine.
Serving
  1. Drizzle with a little more olive oil and balsamic vinegar if desired. Serve warm.

Notes

Use parchment paper on your baking sheet for easy clean-up. Feel free to swap the veggies with carrots, parsnips, or Brussels sprouts.
