Preparation
- Preheat the oven to 400°F.
- Rinse the Brussels sprouts under cool water and pat them dry. Slice them in half or quarters if they are particularly large.
Cooking
- In a skillet over medium heat, add the diced bacon and sauté until crispy.
- In a large bowl, combine the Brussels sprouts, cooked bacon (with the drippings), olive oil, salt, and pepper. Toss until evenly coated.
- Spread the mixture on a baking sheet in a single layer and roast in the oven for 20-25 minutes, stirring halfway through.
- Once out of the oven, sprinkle the crumbled blue cheese over the hot Brussels sprouts.
- Optional: Drizzle with balsamic glaze before serving.
Notes
For variations, substitute with feta or goat cheese. Leftovers can be used in salads or breakfast scrambles.
