  • 1 pound Brussels sprouts, halved or quartered Depending on size
  • 4 slices bacon, diced For added crunch and flavor
  • ½ cup blue cheese, crumbled Plus a little extra for generous servings
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: A sprinkle of balsamic glaze For extra flavor

Preparation
  1. Preheat the oven to 400°F.
  2. Rinse the Brussels sprouts under cool water and pat them dry. Slice them in half or quarters if they are particularly large.
Cooking
  1. In a skillet over medium heat, add the diced bacon and sauté until crispy.
  2. In a large bowl, combine the Brussels sprouts, cooked bacon (with the drippings), olive oil, salt, and pepper. Toss until evenly coated.
  3. Spread the mixture on a baking sheet in a single layer and roast in the oven for 20-25 minutes, stirring halfway through.
  4. Once out of the oven, sprinkle the crumbled blue cheese over the hot Brussels sprouts.
  5. Optional: Drizzle with balsamic glaze before serving.

Notes

For variations, substitute with feta or goat cheese. Leftovers can be used in salads or breakfast scrambles.
