Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss your halved Brussels sprouts with olive oil, salt, and pepper.
  3. Add the chopped bacon to the mixture and toss well to coat.
Cooking
  1. Spread the mixture out on a baking sheet in a single layer, ensuring space between the sprouts.
  2. Roast in the oven for about 20 to 25 minutes, tossing halfway through, until golden brown and fragrant.
  3. Remove from the oven and sprinkle blue cheese over the hot vegetables, tossing gently to melt.
  4. Optionally, add a pinch of red pepper flakes for additional heat.

Notes

Don’t rush the roasting; patience brings out the natural sweetness of the Brussels sprouts. Cheese alternatives like feta or goat cheese can also be used. Leftovers keep well and make for great salad toppers.
