- Preheat your oven to 400°F (200°C).
- In a large bowl, toss your halved Brussels sprouts with olive oil, salt, and pepper.
- Add the chopped bacon to the mixture and toss well to coat.
Cooking
- Spread the mixture out on a baking sheet in a single layer, ensuring space between the sprouts.
- Roast in the oven for about 20 to 25 minutes, tossing halfway through, until golden brown and fragrant.
- Remove from the oven and sprinkle blue cheese over the hot vegetables, tossing gently to melt.
- Optionally, add a pinch of red pepper flakes for additional heat.
Serving

Notes
Don’t rush the roasting; patience brings out the natural sweetness of the Brussels sprouts. Cheese alternatives like feta or goat cheese can also be used. Leftovers keep well and make for great salad toppers.
