  • 1 medium butternut squash, peeled and cubed (roughly 4 cups)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (or your favorite spice)
For the Croutons
  • 2 cups cubed bread (stale bread works wonderfully here) Any type of bread can be used.
  • 1 tablespoon butter, melted
  • Fresh herbs for garnish (like thyme or rosemary) Optional, for added flavor.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the peeled and cubed squash with olive oil, salt, pepper, and paprika.
  3. Spread the seasoned butternut squash in a single layer on a baking sheet.
Roasting
  1. Roast the squash in the oven for about 25-30 minutes, or until tender and slightly golden.
  2. While the squash is roasting, combine the cubed bread with melted butter and a sprinkle of salt in another bowl.
Croutons
  1. Spread the bread cubes on a separate baking sheet and bake for 8-10 minutes, or until golden brown and crunchy.
  2. For added flavor, consider adding extra herbs onto the bread cubes before baking.
Assembly
  1. Once the butternut squash is ready, toss it with the croutons in a bowl.
  2. Top with fresh herbs before serving.

Notes

For best results, handle butternut squash with care. You can also store leftovers in an airtight container in the fridge for up to three days.
