- While the carrots roast, mix ricotta cheese with maple syrup in a small bowl until well combined.

- In a small saucepan, melt unsalted butter and add cinnamon, nutmeg, and cayenne pepper (if using). Stir to combine.
Serving
- Once the carrots are roasted, drizzle with spiced butter and top with dollops of maple ricotta.
Notes
Add chopped nuts like pecans or walnuts on top for added crunch, and roast extra carrots for future meals.
