Ingredients
  

For the roasted carrots
  • 1 pound Fresh Carrots, peeled and cut into sticks
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper
For the maple ricotta
  • 2 tablespoons Maple Syrup
  • 1 cup Ricotta Cheese
For the spiced butter
  • 2 tablespoons Unsalted Butter
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • a pinch Cayenne Pepper (optional) For a zing

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss carrot sticks with olive oil, salt, and pepper.
Roasting
  1. Spread the carrots in a single layer on a baking sheet and roast for about 20-25 minutes, until golden and tender. Stir halfway through for even roasting.
Making Maple Ricotta
  1. While the carrots roast, mix ricotta cheese with maple syrup in a small bowl until well combined.
Preparing Spiced Butter
  1. In a small saucepan, melt unsalted butter and add cinnamon, nutmeg, and cayenne pepper (if using). Stir to combine.
Serving
  1. Once the carrots are roasted, drizzle with spiced butter and top with dollops of maple ricotta.

Notes

Add chopped nuts like pecans or walnuts on top for added crunch, and roast extra carrots for future meals.
