Ingredients
  

For the Roasted Carrots
  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 1 teaspoon honey Enhances sweetness.
  • Salt and pepper to taste
  • Fresh herbs like thyme or parsley for garnish Optional
For the Whipped Feta Dip
  • 1 cup crumbled feta cheese
  • 1/3 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice Fresh is best!
  • 1-2 tablespoons milk Adjust for desired consistency.
  • Salt and pepper to taste
  • A drizzle of olive oil for serving

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Toss the baby carrots with olive oil, honey, salt, and pepper in a mixing bowl until well coated.
Roasting
  1. Spread the carrots on a baking sheet in a single layer and roast for about 25-30 minutes, flipping halfway through.
Preparing the Dip
  1. In a blender or food processor, combine the feta cheese, Greek yogurt, minced garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth.
  2. Adjust the consistency with milk as needed.
Serving
  1. Once the carrots are roasted, garnish with fresh herbs if desired.
  2. Serve the roasted carrots on a platter alongside the whipped feta dip.
