Ingredients
  

For the Flatbread
  • 1 piece pre-made store-bought flatbread or pizza dough A shortcut for easier preparation.
  • 1 cup fresh cranberries Can substitute with dried cranberries; adjust honey if using dried.
  • 4 oz goat cheese, crumbled Can substitute with feta or ricotta.
  • 2 tbsp honey Plus more for drizzling.
  • 1 tbsp olive oil
  • to taste Fresh thyme for garnish Optional for presentation.

Method
 

Preparation
  1. Preheat your oven to 400°F (205°C).
  2. On a baking sheet, toss the fresh cranberries with olive oil and a tablespoon of honey.
  3. Roast the cranberries for about 10 minutes, or until they start to pop and soften.
  4. If using pizza dough, roll it out on a floured surface to your desired thickness. Place the flatbread on a baking sheet.
Assembly and Baking
  1. Spread the roasted cranberries evenly over the flatbread.
  2. Sprinkle crumbled goat cheese on top.
  3. Drizzle more honey on top.
  4. Bake in the oven for about 12-15 minutes, or until the edges are golden and crispy.
Serving
  1. Sprinkle fresh thyme on top after baking.
  2. Slice and serve while warm.

Notes

Feel free to add toppings like walnuts, arugula, or balsamic glaze for a gourmet twist. Store leftovers in an airtight container in the fridge for up to 3 days.
