Preparation
- Preheat your oven to 400°F (205°C).
- On a baking sheet, toss the fresh cranberries with olive oil and a tablespoon of honey.
- Roast the cranberries for about 10 minutes, or until they start to pop and soften.
- If using pizza dough, roll it out on a floured surface to your desired thickness. Place the flatbread on a baking sheet.
Assembly and Baking
- Spread the roasted cranberries evenly over the flatbread.
- Sprinkle crumbled goat cheese on top.
- Drizzle more honey on top.
- Bake in the oven for about 12-15 minutes, or until the edges are golden and crispy.
Serving
- Sprinkle fresh thyme on top after baking.
- Slice and serve while warm.
Notes
Feel free to add toppings like walnuts, arugula, or balsamic glaze for a gourmet twist. Store leftovers in an airtight container in the fridge for up to 3 days.
