Ingredients
  

Flatbread Base
  • 1 large flatbread or pizza crust
Cranberry Mixture
  • 1 cup fresh cranberries or frozen
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
Toppings
  • 4 ounces goat cheese, crumbled
  • 1/4 cup honey Consider drizzling extra on top before serving.
  • 2 tablespoons fresh rosemary, chopped Thyme can be used as an alternative.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the fresh cranberries with olive oil, salt, and pepper.
  3. Spread the cranberries onto a baking sheet in a single layer and roast them in the oven for about 15 minutes until they burst and become slightly crisp on the edges.
Assembly
  1. While the cranberries are roasting, lay the flatbread on a pizza stone or baking sheet. Drizzle with honey and sprinkle crumbled goat cheese over the top.
  2. Once the cranberries are done, scatter them onto the flatbread with fresh rosemary.
Baking
  1. Bake the assembled flatbread for 10-12 minutes, until the crust is golden and the cheese is melted and bubbling.
Serving
  1. Let the flatbread cool for a minute before slicing and serving warm.

Notes

Substitute cranberries with figs or pears if desired. For a low-carb version, use a cauliflower crust. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven.
