Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the fresh cranberries with olive oil, salt, and pepper.
- Spread the cranberries onto a baking sheet in a single layer and roast them in the oven for about 15 minutes until they burst and become slightly crisp on the edges.
Assembly
- While the cranberries are roasting, lay the flatbread on a pizza stone or baking sheet. Drizzle with honey and sprinkle crumbled goat cheese over the top.
- Once the cranberries are done, scatter them onto the flatbread with fresh rosemary.
Baking
- Bake the assembled flatbread for 10-12 minutes, until the crust is golden and the cheese is melted and bubbling.
Serving
- Let the flatbread cool for a minute before slicing and serving warm.
Notes
Substitute cranberries with figs or pears if desired. For a low-carb version, use a cauliflower crust. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven.
